Fish are preserved through such traditional methods as drying, smoking and salting. 

Drying is a method of food preservation that works by removing water from the food, which inhibits the growth of microorganisms. 

Dried fish was a very rich source of proteins, containing 80-85% protein. It was concluded that the proteins in the dried fish were of high quality.
